strawberry and mascarpone trifle

When I last cooked up an Italian feast, I really struggled to find the right dessert. Mr Greedy doesn’t enjoy coffee flavoured desserts, so tiramisu was out.

After a bit of research, I stumbled across this dessert – quick and easy to make, and the sweet mascarpone is very moorish!



500g strawberries

4tsp sugar, plus a little extra

200g mascarpone

6tbsp single cream

vanilla essence

16 x shop-bought sponge fingers

125ml dessert wine

30g pistachios, shelled and chopped

serves 4


  1. hull the strawberries and add to a bowl with a pinch of sugar. mash together slightly with the back of a fork.
  2. using an electric mixer, combine the mascarpone, single cream, sugar and a few drops of vanilla essence until smooth.
  3. line up 4 x trifle glasses (or martini glasses if you’re anything like me and don’t own trifle glasses!!). spoon a small amount of strawberry mixture into the bottom of each glass, and top with a layer of sponge fingers. spoon some dessert wine over the sponge fingers.
  4. cover with the mascarpone mix and continue to repeat these steps until the glass is full. sprinkle the pistachios across the top – quick and easy! they keep in the fridge for a few hours if you make them ahead of time.
